Also observed raw chorizo stored above RTE deli meats in the walk in refrigerator. PIC was unable to correct cross contamination hazards during this inspection due to being short-staffed. Raw animal foods shall be separated during storage, preparation, holding, and display from raw RTE foods and cooked RTE foods. A 24 hour reinspection will take place to verify the foods have been adequately separated.

Due to COVID-19 concerns a signature was not obtained from the operator during this inspection. The inspector verbally reviewed the establishment's inspection rights with the person in charge (Norma E.) and delivered a copy of their inspection rights with the inspection report. This establishment is not participating in the award program at this time and had 1 Priority, 0 Priority Foundation and 1 Core Violations on this inspection. No County legal action will result from this inspection. Inspection report delivered via email.
