Food-contact surfaces: cleaned & sanitized
Priority Foundation-4-601.11(A), Pf: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils Slicer had an accumulation of debris on outside cutting guard. Per employee, slicer was in use at time. Employee was asked to remove and clean cutting guard before cutting anything else because the food residue seemed to be dry and not recent. Employees could not remove blade guard, so they were asked to remove the blades. Upon removal, there was and heavy accumulation of old and recent food debris under the blades and dark spots on inside of blade. Per employee, slicer is only used once a week and is cleaned by another employee who was not at establishment at time. Instructed employee that all pieces needed to washed, rinsed and sanitized before anything else was cut with slicer. Employee began to clean machine using a clean in place method. All pieces and parts (assembled and disassembled) of slicer needs to be cleaned after use. Slicer must be visibly clean (except for fresh food debris when in use).

All refrigerators have an accumulation of food debris. Clean refrigerators and gaskets. Walls above three compartment sink have dark matter growing along seals. Clean. Walls behind prep tables in back have heavy food splatter. Clean.
