Prep refrigerator on cook line measured with an ambient temperature of 47 degrees F. TCS food items in the refrigerator measured with internal temperatures ranging from 46-50 degrees F. Food items such as condiments, sauces, cheese, noodles, tomatoes, and various meats were discarded- see embargo list for details. Food items were stored in fridge over night. Refrigerator will not be used to store TCS foods until it can maintain internal food temperatures of 41 degrees F or below. PIC has ordered a new prep refrigerator. Discussed cold holding.
