Core-6-201.13, C: Floor and Wall Junctures, Coved, and Enclosed or Sealed - Floor tiles below reach-in on cook line and below counter space near grill are missing or damaged with water pooling in their space. Corner of cove base near hand wash station nearest ware wash area and near mop sink is damaged and separating from the wall. Hand wash station on cook-line is separated from the wall and missing caulking. Please have these areas repaired/replaced prior to next routine inspection.

Discussed best methods for cold holding plastic containers in prep coolers (use bottom portion of cooler). Also discussed monitoring of TCS food items and cold holding equipment, pest control, and plumbing.
