Core-3-304.14, C: Wiping Cloths, Use Limitation--------------------------------- Observed a container of quat ammonium sanitizer being stored in the back of the kitchen with a concentration of approximately 100ppm. Notified PIC and the sanitizer was changed out. Discussed with PIC the importance of quat ammonium sanitizer to have a concentration of 150-300ppm to allow proper sanitization of food contact surfaces.

Core-3-304.12 , C: In-Use Utensils, Between-Use Storage---------------------------------- Observed ice cream scoops being stored in a ice cream scoop holder with the faucet off so the scoops were being stored in standing water. Notified PIC and the faucet was turned on and the scoops were placed in the dish washing area to be properly washed, rinsed, and sanitized. Discussed with PIC the importance of properly storing utensils between uses.

Core-4-602.13, C: Nonfood Contact Surfaces------------------------------------ Observed an accumulation of dusk on the shelves storing clean pans in the back of the kitchen and an empty ice cream freezer have spilled melted ice cream at the bottom of the freezer. Notified PIC and discussed the importance of properly cleaning nonfood contact surfaces with a frequency to avoid buildup.
