Observed seal stripping on door of hot holding oven on main cook line damaged with pieces missing. Advised person in charge (PIC) that equipment which holds time/temperature control for safety (TCS) food must be maintained in good repair to ensure it is in proper operation and can hold foods at proper temperatures. PIC stated they would have the door seal stripping repaired.
