Priority Foundation-7-101.11, Pf: Identifying Information, Prominence-Original Containers ----- Observed two spray bottles with chemicals and no label. Person in charge was able to determine what was in the spray bottles and used a permanent marker to label the spray bottles. One was a window cleaner and the other was a degreaser. Containers of poisonous or toxic materials and personal care items shall bear a legible manufacturer's label. PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals ------ Quat sanitizer at 3 compartment sink and in sanitizer buckets observed with a concentration above 400ppm. Establishment had test strips available and easily accessible. Chemical sanitizers may be toxic if not used in accordance to FDA food code requirement. The proper quat concentration for sanitizing food contact surfaces and dishware is 200-400ppm. PIC diluted the sanitizer solution in sanitizer buckets and at the 3 compartment sink and put in a work order to get sanitizer dispenser calibrated. Please ensure proper sanitizer concentrations are met on daily basis.

PRIORITY VIOLATION-5-402.11, P: Backflow Prevention ----- Observed a direct connection between the drain line from steamer and floor drain. Direction connection may not exist between a sewage system and a drain line originating from food equipment. Advised PIC to use either a braided flex drain pipe or PVC. ALSO, ensure there is an air gap between the floor drain and the drain line from steamer. Re-inspection within 3 business days.
