The employee then proceeded to move both salads to be served. Food service employees shall NOT touch ready to eat foods with their bare hands. The Salads were Embargoed. The employee washed their hands and put new gloves on before returning to prep.

A sheet pan of raw beef was stored directly on top of a container of cooked lasagna. All raw animal proteins MUST be stored below ready to eat food items to prevent cross contamination. An employee rearranged the items at the time of inspection.

PRIORITY VIOLATION-4-102.11 (A)(1) and (B)(1), P: Characteristics-Single-Service and Single-Use; Migration of Deleterious Substances; Safe -- Several pounds of raw chicken were stored in a used grocery store "thank you" bag, with the raw chicken directly contacting the bag. These bags are designed for the single service purpose of temporarily storing goods bought from a store, and are NOT food safe. Thank you bags could potentially contaminate any food stored in direct contact with the bag due to the chemicals and dyes used to produce the bags. Additionally, the establishment stores purchased loaves of bread in empty paper flour bags. All food must be stored in food safe containers that are smooth and easily cleanable, and free of any potentially deleterious or harmful substances. An employee stated the chicken had been placed i the bag approximately 10 minutes prior, and repackaged the items in food safe containers.

All employee personal items must be maintained in a designated employee personal area. Employees were asked to remove personal items.

An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.
