Two large covered containers of refried beans date marked 7/30 found in walk-in cooler at an internal temperature of 55*F and 57*F respectively. Per conversation manager with food employee, food employee confirmed beans were made 7/30 and placed in walk-in cooler. When cooling, ensure that the food starting from 135°F reaches 70°F within 2 hours and reaches 41°F or less in 4 hours (for a total of 6 hours from the time it is 135°F to 41°F or less). Refried beans failed to properly cool within time and temperature requirements. Refried beans were embargoed (see embargo sheet). -------------- Food was discarded at time of inspection.
