Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking. At small reach-in refrigerator underneath hot holding station, observed an open package of beef hot dogs and an open package of jalapeno cheddar brats without date marking. Per Person in Charge (PIC), packages were opened more than 24 hours prior. TCS (time/temperature controlled for safety) food prepared and packaged by a Food Processing Plant that does not meet the criteria to be exempted must be clearly marked at the time the original container is opened and is held for >24 hours to indicate date/day the food shall be consumed on premises, sold, or discarded - the day the original package is opened counts as Day 1 and the day or date marked by the operation may not exceed the mfg.’s use-by date if the manufacturer determined the use-by date based on food safety. Discussed importance of proper date marking with PIC. PIC date marked the open TCS food packages. This establishment is not participating in the award program at this time and had 0 Priority, 1 Priority Foundation and 1 Core Violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager >>> No Certified Food Protection Manager (CFPM) at establishment during time of inspection. Per paragraphs 2-102.12(A) and 2-102.20(B) the Person in Charge shall be the Certified Food Protection Manager and per paragraph 2-101.11, a Person in Charge must be present during all hours of operation. Person in Charge stated they are taking the CFPM exam on 1/19. Please obtain necessary certificate(s) and maintain at establishment prior to next routine inspection. 3rd consecutive violation. Discussed cleaning frequency of utensils for TCS foods and sanitizer test strip expiration dates. No County legal action will result from this inspection. Inspection Report emailed and confirmed received.
