Refrigerated unit on end of line ambient temperature measured to be 50*F holding Time/temperature Control for Safety foods (gravy, beans, egg whites, salsa, ham) with internal temperatures measured to be 47-52*F. Per person in charge items were just stocked in unit two hours prior. Person in charge had employee move items to alternate cooler to facilitate rapid cooling. Do not use this unit to hold TCS food until it can hold 41*F or below. Establishment has adequate alternate coolers to use until this unit has been repaired.
