Observed a deep pan of cooked potatoes cooling in reach-in refrigerator. Please ensure cooling foods are stored in containers that will facilitate cooling process. Person in charge (PIC) placed potatoes into shallower pans before placing back into refrigerator. Potatoes were within parameters for cooling times and temperatures. Provided cooling guidance document via e-mail.
