Inspection rights accepted by Yenice T. Report e-mailed. Developed time-as-control (4hr) policy with person in charge (PIC) for partially-cooked hash browns and bacon and provided English and Spanish guidance documents via e-mail. Reviewed best practices for produce washing if establishment does not have a produce prep sink. Designated basin (the Department recommends the "sanitize" basin) of 3-compartment sink should be sanitized before and after use for washing produce. Owner expressed interest in installation of integral warming lamps for shelf where plated dishes are set before service to guests. Provided contact information for Plan Review & Construction program via e-mail. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
