TCS foods (i.e. - cucumber salad, broccoli salad, potato salad, coleslaw, tomato mozzarella salad, etc....) found at counter display case found at internal temperatures of 48*F; ambient air temperature at 48*F. Cold holding of TCS foods must be held at 41*F or below. Per food employee, foods placed in display case at proper cold holding temperature within last 2 hours. Properly store TCS foods at 41*F or below. -------- PIC had food employee remove foods from unit and place in walk-in cooler for rapid cooling. PIC placed work order for unit at time of inspection. Do not use unit to house TCS foods until unit can maintain foods at an internal temperature of 41*F or below.
