Person in charge stated items have only been in unit for 2 hours and were rapidly cooled down in walkin freezer to 38 deg. F by end of inspection. Ensure cold holding of TCS items is held at 41 deg. F or below at all times.

Person in charge stated he will have unit fixed and will use other refrigerator units that are holding below 41 deg.F until the single door refrigerator is properly holding temperature. Unit was post out of order do not use. Ensure all units are cold holding at 41 deg.F or below at all times.

Core-6-501.12, C: Cleaning, Frequency and Restrictions--- Observed organic build up along the walls and floors in McCafe area, behind fryers near front drive thru window and behind grills. Person in charge stated he will have areas cleaned this week and will work on cleaning consistency to keep areas cleaned everyday. PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean.
