Observed par cooked chicken breasts being stored in walk-in cooler on speed rack. Items were being stored as if raw, however there was no non-continuous cooking policy drafted and the item was not labeled as raw. Item was correctly labeled at time, and fillable non-continuous cooking policy document was discussed with person in charge. Please complete non-continuous cooking document and have it approved by inspector prior to continuing to par cook raw animal items.
