PIC was notified and moved to reheat. Ensure that TCS (Time/Temperature Control for Safety) foods maintain a temperature of 135* F or above for hot holding.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding---Observed assorted cheeses, salsa, and guacamole in the deli glass display cases with internal temperatures ranging from 47-48* F. PIC was notified and adjusted temperature of cooler and items started cooling down (per PIC, items had been in temperature 2 hours prior). Ensure that TCS (Time/Temperature Control for Safety) foods maintain a temperature of 41* F or below for cold holding.
