PRIORITY VIOLATION-3-302.11 (A1-2), P: Packaged and Unpackaged Food-Separation, Packaging, and Segregation; Protection From Cross Contamination. In refrigerated make table across from cookline, observed raw shelled eggs stored on shelves above an open container of RTE (ready to eat) cut lettuce. In walk-in refrigerator, observed a container of raw ground beef stored on top of a container of cooked potatoes. Raw animal foods shall be separated during storage, preparation, holding, and display from raw RTE foods and cooked RTE foods. Discussed importance of proper food storage with Person in Charge (PIC). PIC moved raw eggs and raw ground beef for proper storage.
