PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness-------Observed no sanitizer in sanitizing compartment of 3 compartment sink. Employee was observed placing dishes in compartment and removing them to clean side of sink to dry. Employee added chlorine to 50 ppm at the time of inspection. Please ensure clean dishes are submerged in sanitizer solution for a minimum of 30 seconds prior to setting aside to dry to ensure dishes are properly sanitized.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding-------Observed salsa at 50 *F inside salsa bar. Ice had melted down below the bottom of the containers. Salsa had been inside the unit for 3 hours and was discarded at the time of inspection. Please ensure TCS foods are maintained at 41 *F or below. Recommended to manager developing a time as a control policy for salsa bar. Discussed requirements for Time as a control and provided handout.

PRIORITY VIOLATION-7-202.12, P: Conditions of Use------Observed chlorine sanitizer concentration in wiping cloth bucket above 200 ppm. Employee remade at 50 ppm at the time of inspection. Wiping cloths should be maintained in chlorine sanitizer between 50 and 100 ppm. Concentrations above 100 ppm are considered toxic.

PRIORITY VIOLATION-5-402.13, P: Conveying Sewage------Observed grease built up all around the grease trap and splashed on the back wall behind the trap. Person in charge will have area cleaned up prior to re-inspection on 3/8/18. Grease needs to be maintained inside the trap to prevent contamination of surrounding area and storm drains.
