Employee re-washed hands in handwashing sink and PIC stated they will clean out the handwashing sink near store entrance.

Observed employee place a cherry on milkshake with bare hands. Advised employee and person in charge (PIC) that ready to eat (RTE) foods must not be handled with bare hands. Suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment shall be used when handling RTE foods. Employee discarded the milkshake, washed hands, and put on food safe gloves.

Proper hot holding temperatures
PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. Observed container of chili in upper right location of steam table measuring 78 - 98 degrees F. Employees and person in charge (PIC) did not know when the chili was placed in the steam table, but stated it was in the steam table for at least an hour. Other food items in steam table were above 135 degrees F. Temperature gauge on steam table was set to highest setting. Re-checked temperature on chili later in the inspection and temperature had not changed after 30 minutes. Advised PIC that the food items are time/temperature control for safety (TCS) foods, which must be held above 135 degrees F. Employee discarded the chili and PIC stated they will ensure TCS foods are held at proper temperatures.

Ensure outside of milkshake dispenser and in-use milkshake blender is washed, rinsed, and sanitized every 4 hours. No County legal action will result from this inspection.
