Observed debris build-up on thumb screws and between handle and plastic piece of vegetable dicer. Additionally, observed dried food debris between on blades and plastic piece of dicer. Vegetable dicer was stored away as clean at time of inspection. Advised person in charge (PIC) that utensils/equipment, which process time/temperature control for safety (TCS) foods, must cleaned to sight and touch to prevent contamination of foods. PIC moved the vegetable dicer to the 3-compartment sink to be washed, rinsed, and sanitized.

Advised person in charge (PIC) that non-food contact equipment which hold containers of food must be cleaned to sight and touch to ensure foods stored below wire rack shelves are not contaminated by food debris build-up. PIC stated they will have the wire racks cleaned as soon as possible.

Advised person in charge (PIC) that handwashing sink and plumbing shall be maintained in good repair. PIC stated they will have the handwashing sink faucet repaired.

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability Observed exposed wood side of desk area, near front store soda fountain. Advised person in charge (PIC) that equipment in kitchen and beverage areas shall be constructed of a non-absorbent material which does not accumulate debris, is smooth, and can be easily cleaned. PIC stated he would inform restaurant management. Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed food debris underneath wire storage racks in walk-in refrigerator and freezer. Additionally, observed a large accumulation of grease between fryers and reach-in freezer on main cook line. Advised person in charge (PIC) that areas underneath and between equipment shall be cleaned to sight and touch and at a frequency to prevent debris build up. PIC stated they will have areas cleaned more thoroughly and frequently.
