PRIORITY VIOLATION-5-402.11, P: Backflow Prevention ----- A hose attached to the mop sink was stored with a spray nozzle attached at the end of it with water left on. PIC turned the water off and disconnected the hose from the mop sink faucet. Discussed the potential health hazard of cross connection, back siphonage and backflow.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods ------ Observed corroded handwashing sink faucets at both sinks. Advised person in charge (PIC) that fixtures shall be maintained in good repair to ensure they smooth and easily cleanable. PIC stated they will have sinks repaired. Core-6-501.12, C: Cleaning, Frequency and Restrictions ----- Observed an excessive amount of debris underneath kitchen fryers, equipment in kitchen, and wire storage racks in walk-in refrigerator and freezer. Additionally, observed dried food debris on walls of kitchen. Advised person in charge (PIC) that walls and areas underneath equipment shall be cleaned to sight and touch and at a frequency to prevent debris build up. PIC stated they will have the areas cleaned more thoroughly and frequently. 3ND CONSECUTIVE VIOLATION

Core-6-501.14, C: Cleaning Ventilation Systems, Nuisance and Discharge Prohibition ----- Observed excess build-up of grease dripping from the hood ventilation filters over the flat top grill. Advised PIC to clean filters at a frequency that doesn't allow buildup of grease to where it drips behind equipment. PIC stated that filters will be cleaned frequently. Filters that collect particulate matter must be cleaned or changed frequently to prevent overloading of the filter.
