Observed sanitizer at three compartment sink while dishes were in the process of being washed at 0 ppm. Quaternary Ammonia based sanitizers must be between 150 - 400 ppm. Sink was emptied and replaced with @ 300 ppm sanitizer solution. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff a verification breakdown which resulted in the violation. Staff were instructed to test sanitizer once the bubbles have dissipated and document results.

This establishment is on the Cutting Edge of food safety and was awarded an “A” grade. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff a verification breakdown which resulted in the violation. Staff were instructed to test sanitizer once the bubbles have dissipated and document results. Sink was emptied and sanitizer at the correct level was replaced. Verbally discussed Notice of Inspection Rights with Gloria C. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. No County legal action will result from this inspection.
