Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed areas under equipment and under dry storage area racks with spoilage buildup, non food items and grout color differences in indicating some areas are covered in organic matter. An alcohol wipe was used to further investigate the difference in this area and grout throughout the deli needs a deep cleaning. Discussed that physical facility is not cleaned as frequently as necessary and/or not cleaned during periods when the least amount of food is exposed. Cleaning should occur when floors and coverings have spoilage buildup (includes duckboards and mats) and if any walls or ceilings in any room (including walk-in coolers) have dirt buildup. Cleaning should also be applied to attached equipment that can be dirty (vent covers, switches, light fixtures, fans, etc.). Cleaning should be conducted when the least amount of food is exposed, if cleaning will be done during business hours.

Core-6-501.14, C: Cleaning Ventilation Systems, Nuisance and Discharge Prohibition Observed the vents and surrounding tiles near the vents, above the food areas holding an accumulation of dust. Observed the air fans inside the walk in cooler holding strings that show the fan is operating/blowing that have accumulated dust. Surfaces that are not food shall be cleaned at any time when contamination may have occurred AND at least every 24 hours. Discussed that Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials.
