Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed two (2) vents above the cold holding units for seafood areas holding an accumulation of dust in the center of the vents. Surfaces that are not food shall be cleaned at any time when contamination may have occurred AND at least every 24 hours. Discussed that Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials. Cleaning should occur if any walls or ceilings in any room (including walk-in coolers) have dirt buildup.

Discussed establishment policies regarding: water pressure buildup from spray nozzles at the meat market/seafood area (i.e. Food Code Item 49F 5-203.14 – Backflow Prevention Device, When Required. This is only for “Water Supply” lines. NOTE: This refers to prohibiting a connection between the potable water system of an establishment with any contaminant. FOR EXAMPLE: No approved backflow device installed when an air gap is absent. AND/OR A hose is attached to a faucet and there is no vacuum breaker present. AND/OR A hose is attached to a faucet and the installed backflow prevention device is not approved or is not operating properly. AND/OR A chemical cleaning system is installed on a mop sink faucet without an integral anti-siphoning device.)
