Observed that there was no sanitizer during last cycle of mechanical dish wash unit. Sanitizer must be between 50 - 150 ppm during the sanitizer cycle at dish machine. As per person in charge, staff will wash dishes at three compartment sink or, wash dishes at dish wash unit and then sanitize dishes at three compartment sink. Advised person in charge to test sanitizer concentration once a day to verify unit is working.
