Establishment has no hand drying provision at hand washing sink by outdoor cooking area (conducting outdoor cooking at time of inspection). Had person in charge provide paper towels. Hand washing sinks must be stocked with soap and paper towels at all times to ensure proper hand washing.

Observed container of birria (cooked beef) in walk in with internal temperature measured to be 55*F. Per employees an ice bath should have been used to cool item but unsure if it was cooled properly. Per employees item was not removed from walk in today. Item was removed to voluntarily discard. Provided cooling guidance documents in Spanish. See embargo.

Observed flies in back storage area, outside of walk in and back coolers and near three compartment sink. Please contact licensed pest control company for treatment, premises must be rid of insects. Follow up required within ten days.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods. Observed base missing missing in back area near storage and walk in. Observed door frame to back area in disrepair with parts missing revealing gap. Observed wall damage in back area. Observed floors throughout to have cracks and parts missing revealing rough uneven surfaces and allowing liquids and debris to collect. All surface must be smooth and easily cleanable. Please repair and maintain.
