Concentration of chlorine sanitizer solution in sanitizing basin of in-use 3-compartment sink was measured at 10ppm. Please ensure chlorine sanitizer solutions are maintained at 50-100ppm. Employees added bleach to basin to bring solution to proper concentration. Instructed employees to re-wash, rinse, and sanitized recently-cleaned equipment.

Observed pico de gallo salsa, shredded cheese, shredded lettuce, raw shell eggs, and sour cream with internal temperatures of 54-63 degrees Fahrenheit. Items were stored in refrigerated prep table 3 hours prior to inspection, per person in charge (PIC). Ambient air temperature of unit measured 57F with min-max thermometer. PIC moved foods to walk-in refrigerator for rapid cooling.

Re-inspection tentatively scheduled for 10 business days from today's date (May 25, 2023).

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
