Observed chicken breast in the walk in cooler at 45*F, cold hold of deli meats to be 41*F or lower. Chicken breast was placed into separate cooler to cool rapidly to 41*F. After 40 minutes sliced turkey cooled to 42*F.

Walk in cooler holding deli meats, eggs, and bacon with an ambient temperature of 45*F. Cold hold units must be able to hold foods at 41*F or lower. As per manager, the unit has been working, and it was repaired approximately 3 weeks ago. Advised manager to check internal thermometer daily to ensure unit is holding food at 41*F or lower. Repair company was called to fix and all temperature control for safety foods were moved to refrigeration that could hold food at 41*F.

Verbally discussed Notice of Inspection Rights with Kathy D. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Walk in cooler is scheduled to be fixed on 4/23/2021. Reinspection scheduled for on or before May 3, 2021to check that refrigerator is holding food at 41*F.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
