Three 1/3rd containers holding two beef chili's and one nacho cheese at holding at 80 °F. Unit is a hot hold unit and not designed to reheat. As per person in charge she placed in table top hold unit this morning and did not turn unit up enough. Product was cooled left over product from previous day. Water in unit temped at 88 °F. Unit was turned up to maximum which reached a well temperature of 185 °F. Instructed person in charge to discard all out of temperature time/temperature control foods. Reviewed proper reheating processes, temperature requirements and how to check thermometer calibration using ice water at 32 °F.
