PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed numerous time-and-temperature control for safety (TCS) foods, including raw chicken wings, sliced grilled chicken, shredded mozzarella cheese, and garlic in oil mixture with internal temperature ranging from 45-49 degrees Fahrenheit. All items were stored in 3-door refrigerated prep table that was measured with an ambient air temperature of 51F with min-max thermometer. Per person in charge (PIC), items were placed in unit less than 4 hours prior to inspection. Items were moved to other functional refrigerated prep tables, reach-in refrigerators, and walk-in refrigerator. Establishment has sufficient refrigeration to keep remaining TCS foods cold.

No test strips were available for chlorine sanitizer solution used at in-use mechanical dishwasher or quaternary ammonium (quat) sanitizer solution at in-use 3-compartment sink or in sanitizer buckets. Please ensure test strips are available at all times so staff can verify concentrations of sanitizer solutions throughout service. 10-Day Re-Inspection: Re-inspection will occur on or before July 26, 2023. Correction may be provided via e-mail.

This establishment received a B Grade and had 1 Priority and 1 Priority Foundation violations on this inspection. Inspection rights accepted by Lashanda K. Report e-mailed to owner. Discussed reduced oxygen packaging (ROP) equipment and usage with person in charge (PIC). Establishment may not hold items prepped in the establishment in ROP conditions for longer than 48 hours without a variance. PIC indicated they are currently enrolled in Food Protection Manager coursework. Re-inspection will occur on or before 7/26/2023. Correction of violation may be provided via electronic means in lieu of an in-person re-inspection. No County legal action will result from this inspection. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months.
