Inspection Comments

Meeting with Gcon Contractor, Parks and Rec and Buckeye Maintenance department. The location has been selected for a facelift and the County permit requirements were discussed: 1). Location is required to have: a). Solid surface counters for all prep and work counters with sinks. Transaction counters are exempt. b). A three compartment sink is required with the third compartment indirectly plumbed through a hub drain. Drain boards or drying racks are required for air drying if washed dish ware. c). Garbage disposers are not allowed on three compartment sinks, hand sinks or food prep sinks but ok on dump sinks. d). Ceiling should be washable. e). Walls should be washable with a durable wall finish behind sinks. f). An easily cleanable floor with a coved floor / wall juncture. The current floor in the dry storage and kitchen is in compliance. g). The range that is there may remain as you do not cook any foods. This is dependent on the menu. You could also remove and replace with a countertop hot point unless you need to keen an oven. h). Microwaves are not regulated (Meaning commercial requirement) as long as the machine is in good repair and in good working order. 2). Mop sink and water heater are in excellent shape and restrooms are in the hall way adjacent. 3). If you are planning on storing any potentially hazardous foods for service to the public you will need to provide a commercial fridge. Location has an ice machine that is properly plumbed. Location has a home style fridge used for personal food. Location does not wash produce or thaw meats, no food prep sink required. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
