Observed cooked sausage patties and scrambled eggs on cook line steam table measuring 78 - 81 degrees F. Employee stated the food items were prepared and placed on the steam table within the last 30 minutes. Advised person in charge (PIC) that the food items are time/temperature control for safety (TCS) foods which must be hot held above 135 degrees F. An employee moved the cooked sausage to the grill to reheat to 165 degrees F and hot hold at 135 degrees F; the scrambled eggs were discarded. PIC stated they will ensure TCS foods are held at proper temperatures.
