PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ----- The following products were being cold held using ice baths inside the sandwich make-line unit; sliced cheese (48*F), shredded cheese (48*F), sliced tomatoes (50*F), and cut lettuce (55*F). Person in charge stated that there is a work order for the refrigeted unit, hence the use of ice baths until unit is fixed. However, there was barely any ice around the food products listed above. Per PIC, all products were relocated from walk-in cooler roughly 3hrs prior to this inspection. All items were moved back to the walk-in cooler where they were observed with internal temperature range of 45*F and dropping. New ice baths were made correctly, with food containers submerged in ice. Discussed importance of replenishing ice to keep food below 41*F. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability ----- In multiple areas throughout the kitchen, observed partial or entire missing floor tiles and grout, exposing the concrete underneath and collecting water. PIC stated they will put in a work order. Please ensure that all floors walls and ceilings are kept in good condition that allow them to be smooth and easily cleanable. Core-6-501.12, C: Cleaning, Frequency and Restrictions ----- Areas below storage racks in walk-in cooler and freezer observed with build up of food debris and plastic/carboard. Please clean below equipment and storage racks in a frequency and manner that prevents build up and prevents attraction of pests.
