PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Chlorine test strips were available and easily accessible. PIC made several attempts to prime the dishwasher, each time, there was 0ppm of chlorine after final rinse. There were dishes being washed in dishwasher at time of inspection. PIC stated they will call the service provider to get dishwasher fixed. Advised PIC to use the 3 compartment sink until dishwasher is fixed. Quat dispenser at the 3 compartment sink was dispensing proper quat concentration between 200-400ppm at time of inspection. Core-4-602.11 (E), C: Equipment Food-Contact Surfaces and Utensils-Frequency; Non-TCS. PIC disassembled soda nozzles and washed, rinsed, and sanitized nozzles at time of inspection. Discussed with PIC that the soda nozzles must be cleaned at a frequency as to prevent future build up. At least ones every 24hrs.
