Person in charge (PIC) states the food had been placed since 11AM this morning. Explained to PIC that all time/temperature control for safety (TCS) foods must be maintained at 41*F or less at all times except during preparation, cooking, cooling, or when time as a control is used. Since it had been over 4 hours since the TCS food was confirmed at 41*F or below, the items listed above were voluntarily discarded. All other food in bottom drawers had just been placed and temped at 41*F and were moved back into the walk-in. Other refrigeration units are available to store any other TCS foods. PIC stated no other TCS foods will be placed until the unit is serviced.
