These items included pico de gallo, shredded cheese, shredded lettuce, sour cream, and various cooked meats. Thermometer was calibrated on site. Per person in charge (PIC), these items had been in the unit for less than an hour and they had left the unit open during lunch. Ambient air temperature of the unit was 55°F. Due to the lack of refrigeration space, 4 hour time as a control will be used until the unit is repaired. Reviewed proper cold holding requirements with PIC.

PIC will have the owner contact a repair technician. Reviewed cold holding equipment requirements with PIC to ensure foods are kept at or below 41°F. Do not store TCS foods in this unit over night until it is repaired. Re-inspection will be conducted within 3 days.
