Employee restocked hand soap at time of inspection. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.--- Observed 8 oz bottles of milk located in reach in refrigerator with internal temperatures at 47 deg.F and blast ice cream machine liquid dairy mix with an internal temperature of 50 deg. F. Person in charge stated she was not sure when the 8 oz bottles of milk were last in proper temperature and were discard (view embargo form) and the shake dairy mix has only been in unit for an hour and was quickly placed in walk in freezer to cool down to 40 deg.F by the end of inspection. Ensure cold holding of TCS food items is held at 41 deg. F or below.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
