Observed two, five gallon containers of marinara sauce in walk in cooler by grill line in kitchen (one container at 51*F and the second container 55*F). Cold hold of food to be 41*F or lower. As per the cook staff, marinara was prepared on 6/2/2021 cooled within an ice bath the previous day, covered and placed in walk in cooler. Two other containers prepared at the same time were recorded to be 41*F. Advised staff to verify cold hold temperatures with a medal stem thermometer to ensure cold hold is at 41*F. Also advised not to place all marinara in the same area of walk in cooler until it is verified to be 41*F. Marinara was embargoed and destroyed by cook staff.
