Large, deep plastic container of steamed chicken found covered in walk-in cooler at an internal temperature of 105*F - 110*F in center. Per PIC, chicken was placed in walk-in cooler an hour. Use acceptable methods to properly cool TCS foods. Acceptable methods include: o Placing food in shallow pans. o Separating the food into smaller or thinner portions. o Using rapid cooling equipment (i.e. a blast chiller). o Stirring the food in a container placed in an ice water bath. o Using containers that facilitate heat transfer. o Adding ice as an ingredient. o Other effective methods. ---------- PIC broke down large container of steamed chicken into uncovered, smaller portions and place onto multiple metal trays. Trays were placed on shelves and speed rack in walk in cooler. PIC routinely monitored internal temperature of product with probe thermometer to assure product properly cooled down within proper cooling time and temperature requirements at time of inspection.
