Observed cook pull up visibly soiled pants with gloves on then grab chicken fried steak with same gloves on. When brought to attention, employee washed hands. Ensure hands are washed after discarding gloves, when changing tasks, when contaminated, and after touching body/clothes. Observed employee wipe hands on apron then wash hands for 5 seconds. When brought to attention, employee washed hands for 20 seconds. Ensure hands are wet, scrubbed with soap for 20 seconds, rinsed, and dried with paper towels every time a hand wash is required.

Observed milk cartons in large reach-in fridge at server station at 47-48 degrees F. Per PIC, the milk was placed in the fridge 30 minutes prior to inspection. When brought to attention, PIC placed milk in walk-in to cool. Ensure proper cold holding temperatures of 41 degrees or less at all times.

This establishment received a D Grade and had 3 Priority, 0 Priority Foundation and 0 Core violations on this inspection. No County legal action will result from this inspection. A pattern of non-compliance is developing for Priority violation # [6], [2-301.14, P: When to Wash], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. PIC declined offer for AMC visit. Per PIC, management will train employees on handwashing again.

e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
