PRIORITY VIOLATION-3-501.18, P: Ready-To-Eat Time/Temperature Control for Safety Food - Disposition---Two bags of pot pie mix with 3-5 date mark, two pans of marinara sauce items with 3-5 date mark and 3-15 date mark, and turkey with 3-14 date mark in walk in cooler. PIC stated that turkey was made the previous day and provided proper date mark. PIC was unsure of when the 3-15 marinara sauce item was made. PIC discarded both marinara sauces and pot pie items-see embargo form. Ensure that all ready to eat PHF/TCS food items are properly date marked and disposed of when the date mark has been surpassed.

This establishment received a(n) D Grade and had 3 Priority, 0 Priority Foundation and 0 Core violations on this inspection. A pattern of non-compliance for foodborne illness risk factor violation # 13, 3-302.11 has been noted during this inspection. An Active Managerial Control Intervention Plan visit was offered to the person in charge at the time of inspection. Failure to correct repeat violations may result in legal action. Emailed the PIC a food storage chart. For additional resources please visit-https://www.maricopa.gov/4533/English-AMC-Toolbox *The reach in cooler in bar area is fluctuating in temperature between 50-60F. (The bar was not currently open or in use) The PIC stated that the unit would be scheduled for maintenance/repair. No County legal action will result from this inspection.
