Observed several containers of cooked rice, packaged breakfast sandwiches, and French fries in two warming units with internal temperature measuring 77-115 degrees Fahrenheit. Please ensure all time-and-temperature control for safety (TCS) foods are held hot at 135F or warmer. Per person in charge (PIC), items were cooked and placed into warming units 30 minutes prior to inspection. PIC voluntarily discarded French fries and moved breakfast sandwiches and rice into ovens to reheat to 165F.

This establishment received a B Grade and had 1 Priority, 0 Priority Foundation and 0 Core violations on this inspection. Inspection rights accepted by Sophia S. Report e-mailed. Per person in charge (PIC), high-temperature dishwasher is not operational and a work order has been placed. Establishment has been using 3-compartment sink for ware washing until repairs are completed. No County legal action will result from this inspection.
