PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals ----- A sanitizer bottle labeled "Kitchen Bleach" was observed to have a chlorine concentration greater than 200ppm using test strips. Per PIC, the sanitizer solution is used for cleaning food contact surfaces in the kitchen. Establishment did not have chlorine test strips available and easily accessible. Chemical sanitizers may be toxic if not used in accordance to FDA food code requirement. Chlorine sanitizer must have a concentration of 50-100ppm. PIC discarded the bleach solution at time of inspection. Advised PIC to use quaternary solution from the dispenser to sanitize food contact surfaces because they have quat test strips and the dispensed solution had a proper quat concentration of 200-400ppm. Chlorine test strips must be available and easily accessible if bleach is used to sanitize food contact surfaces.
