PRIORITY VIOLATION-3-501.18, P: Ready-To-Eat Time/Temperature Control for Safety Food - Disposition. ===> Observed cooked beef pasta dated 10/13, cooked noodles dated 10/11 and mozzarella cheese dated 10/6 in the reach-in refrigerator. The TCS foods should have been discarded 1-8 days prior to inspection. PIC discarded, see embargo form. Discussed 7-day date marking and disposition. Day 1 begins the date that a package of TCS food is opened, such as deli meats, or once cooked/prepped, such as noodles or proteins. Adding 6 to the date of day one (6+1) determines the discard date. Discussed the danger of using TCS foods past the discard date. Listeria is the pathogen of concern, which cannot be observed by looking at the food in question. Discussed performing preventative maintenance on the refrigerator and taking temperatures of the food to ensure that 41F or below is maintained. No County legal action will result from this inspection. The inspection report was emailed and confirmed during the inspection.
