Sliced cheese, sliced tomatoes, and cut lettuce on top of the sandwich table with a discard time of 2pm. A bag of cut lettuce was stored at room temperature on the shelf under the sandwich table without a discard time sticker. PIC stated that the items were placed on the table at 5am this morning. PIC adjusted the time for 4 hours with a discard time of 9am and added a sticker to the bag of lettuce. Initial start temperature for 4 hour hold time is 41°F or less when removed from cold holding and 135°F or greater when removed from hot holding.
