PRIORITY VIOLATION-3-101.11, P: Safe, Unadulterated and Honestly Presented---Observed several small flies land on top of multiple assorted donuts in the front donut case. Food must stay protected and safe from adulteration. PIC discarded adulterated donuts at time of inspection (see embargo form). Discussed pest control and food protection with PIC at time of inspection (see pest violation).

Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding---At approx. 11:30 AM, found back cold holding unit for milk/cream holding all products at temperatures between 47-53 degrees F with probe thermometer (confirmed by PIC thermometer). Except during preparation, cooking, cooling, or when time is used as a control all PHF/TCS must be maintained at 41°F or less. PIC temperature log book states that all product inside unit was below 41 degrees F at 10 AM. All product was dumped from unit into a larger container and placed in the walk-in to return to below 41 degrees F. Per PIC a work order is being placed for the unit and the unit will not be used until cold holding temperatures can be reached.

Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence---Found 60+ small flies throughout the entire kitchen area. Flies are mostly concentrated on the front wall underneath the order menu television screens. Flies were landing on food at time of inspection and were seen near the syrups and back areas of the kitchen in lesser numbers. Per PIC, Pest control was last done sometime in April. Per PIC, the problem is somewhat recent and pest control will come out either today or tomorrow to address the issue. Re-inspection required.
