Observed dish washer handle dirty dishes and then clean dishes without washing his hands. Discussed washing hands after handling dirty dishes and then clean dishes. Also observed cook grab raw hamburger patty with tongs but removed paper from patty with gloved hand and then grabbed a hamburger bun with same gloved hand. Asked cook to wash his hands and discard hamburger bun. -------2nd Repeat

Discussed having chemicals stored properly to prevent contamination of food. -------2nd Repeat Priority Foundation-7-102.11, Pf: Common Name-Working Containers Observed spray bottle of what looked like glass cleaner unlabeled. Server dumped out liquid because they were unsure of what it was. Observed two more spray bottles by hostess stand unlabeled. Discussed proper labeling of all chemicals to prevent misuse. ---------2nd Repeat

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability Observed two ceiling tiles that are not smooth and easily cleanable and one missing tile. Please replace all three tiles. Observed two holes in the wall near water heater. Please repair holes with smooth easily clean surface. Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed heavy build up of grease and dirt throughout kitchen area, on shelf above line and on the ceiling above food prep area. Please increase cleaning frequency to preclude build up of grease and dirt in kitchen area.

No County legal action will result from this inspection. Report delivered by email and inspection rights signed for by Joe H. A pattern of non-compliance is developing for Priority violation #26 and #6, 7-201.11 and 2-301.14, which have been noted during this inspection. Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
