Loaded baked potato soup at soup hot holding station near entrance of store with an internal temperature ranging 110-120*F. All hot foods should be held at a temperature of 135*F or above. After discussion with the person in charge, it has been determined that the root cause of the violation was required repair to unit. No current temperature monitoring (logs) in place for hot holding unit, which resulted in the violation. Person in charge voluntarily discarded soup and will implement temperature logs for unit.
