Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability ------ Observed multiple sections of chipping epoxy flooring with exposed unsealed concrete and aggregate rock. Ensure flooring is smooth and easily cleanable. Repair/replace flooring prior to the next routine inspection and maintain in good repair. Core-6-501.12, C: Cleaning, Frequency and Restrictions ------ In both walk in coolers on the sides of the ramps, observed a heavy accumulation of food debris and dirt. Also observed a dark accumulation of debris and dirt under tables/equipment throughout several areas in the kitchen. Clean areas and maintain a regular cleaning frequency to prevent buildup.

This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation and 2 Core Violations on this inspection. Of note: -Hot water took approximately 5 minutes to reach all hot water faucets. Discussed ensuring hot water is available at all sinks within 45 seconds. Manager stated the water takes longer to start in the morning during the winter but will stay hot once primed. Advised PIC to contact plumber/electrician to ensure hot water is always available within 45 seconds. -Establishment is using a hose to fill pots next to the walk in freezer. Line was not connected at the time of inspection and a hose bib vacuum breaker was added. Owner was instructed to obtain a reduced pressure zone (RPZ) backflow preventer or provide a swing arm with an air gap, similar to the pot filler at the other end of the cooking line, prior to next inspection. Discussed that a hose bib vacuum breaker is not sufficient for this application. Notice of Inspections Rights were verbally reviewed with manager, Quyen T. A copy of the report was emailed to the manager. No County legal action will result from this inspection.
